Tasty, hearty, and healthy!

Place the beans, scallions, garlic, cumin, chili powder, pepper and 2 T of the lime juice, and 1/4 tsp sea salt in food processor. Pulse ingredients till well combined. Place mixture in medium size bowl. Add the flax egg and quinoa and mix well.

Using your hands create around 8 patties. Put patties on platter and refrigerate for 30 minutes uncovered.

Heat a wee bit of oil in skillet and brown the patties 4 minutes each side.

You can serve the patties with greens, cilantro, sliced red pepper; the choices are endless. I like to serve mine with a dollop of salsa on the top.
