Folks rave about this easy, non-dairy cheez. Hard to believe it's not the real thing. But let's face it, real doesn't always mean healthy!!

1 cup raw organic cashews, soaked in water for 8 hours and drained
3 T tahini
3 T chickpea miso
3 T lemon juice
2 T nutritional yeast
4 garlic cloves, peeled


Place all ingredients in the Vita-Mixer in the order listed, and process on high till creamy and smooth. If you don't have a high powered mixer, then mince the garlic and process all ingredients in a blender on high or in a food processor. Sometimes I add a wee bit of water for a creamier consistency.
