No oil, no eggs, no butter; only great taste and morning comfort!

1 cup dried cranberries or 2 cups fresh cranberries, finely chopped and mixed with 1/2 cup sugar.
1 1/2 cups organic white flour
3/4 cup whole wheat flour
1 1/2 tsps baking powder
1 tsp baking soda
1 tsp cardamon
1/2 tsp salt
3/4 cup firmly packed brown sugar
1/2 cup organic applesauce
1/4 cup non-dairy milk (I like to use plain almond.)
1/4 cup orange juice
Ener-G Egg Replacer (enough for 2 eggs) (Read package directions.)
2 tsps grated orange rind


Preheat oven to 350.

In large bowl, stir together both flours, the baking powder, baking soda, cardamon and salt.
In medium bowl, beat the brown sugar, the applesauce, the non-dairy milk, orange juice, orange rind and egg replacer.
Stir the liquid into the dry ingredients and mix till just combined. Stir in the cranberries.
Bake for 1 hour or till toothpick in center comes out clean.
Note: You can substitute cinnamon for the cardamon and add about 1/2 cup chopped walnuts if you'd like.
