Tofu works like eggs when it comes to French Toast, but without the cholesterol and saturated fat.

  • 8 ounces low-fat silken tofu
  • 1 ripe banana
  • 1 /2 cup non-dairy milk (soy, almond or oat)
  • 1 tsp maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 T nutritional yeast
  • 1/8 cup finely chopped walnuts (optional)

Toast bread slices first. Use a hearty whole grain bread for French Toast.

Blend all ingredients in food processor. Dip toasted bread in batter and brown on your favorite griddle!

Leftover French toast will keep for 2 days in frig. Enjoy!!
