The closing class of each Food for Life series is a fun potluck. I invite class participants, who are able and willing, to share one of their favorite plant based creations for all to enjoy. Barb shared this muffin recipe and though it called for 2 eggs and honey, I made some substitutions that will do just nicely. (Must say this plant based Nana has no problem with honey, though I don't use it!)

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup coconut
  • 1/4 cup spelt flour
  • 1 tsp baking soda
  • 2 bananas
  • 2 flax eggs (2T ground flax mixed with 6 T warm water)
  • 1/4 cup honey or agave
  • 1/2 cup chopped walnuts
  • 1 1/2 tsps cinnamon
  • 1 tsp vanilla
  • 1/3 cup raisins
  • 1/4 cup almond milk

Mix the dry ingredients in large bowl  (oats, flours, baking soda and cinnamon)

Mash bananas well. Add the flax eggs that have jelled, and the honey or agave. Add the vanilla and almond milk. Mix the liquid ingredients well and add to the dry ingredients. Mix again. Fold in the walnuts and raisins. 

Bake at 350 for 25 minutes. Enjoy!!
