• 2 1/2 cups whole wheat pastry flour 
  • 1/4 cup sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsweetened applesauce
  • 1/2 cup non-dairy milk
  • 1 T vegetable oil
  • 1 T molasses (not blackstrap)
  • 1 T apple cider vinegar
  • 1/2 cup raisins

Preheat oven to 375.

Stir together flour, sugar, cinnamon, nutmeg, baking soda, and salt in a bowl.

In a larger bowl, combine the applesauce, nondairy milk, oil, molasses, and vinegar. Mix thoroughly. Add the flour mixture and stir just to mix. Then gently stir in the raisins. 

Spoon into lightly oiled muffin cups, filling 3/4 full, and bake for 15 - 20 minutes. Test with toothpick for doneness.

Note: Can add 1/4 cup chopped walnuts and/or replace the raisins with dried cranberries.
