The last class of our Food for Life Series is usually a Pot Luck in addition to demonstration recipes. This gives participants an opportunity to share a favorite dish that they've recreated during the course of the series. We've all enjoyed some fabulous, tasty, and healthy dishes. Here's another from Lee W.

1 large onion
1 large red bell pepper
4 cups vegetable broth
1 cup water
2 sweet potatoes, cut into 1-inch pieces
1 cup red lentils


Saute the onion and red bell pepper in a little water until soft. Add the veggie broth and water. Bring to a boil, then add the sweet potatoes. Bring all to a boil again, and then simmer for 30 minutes. Add the red lentils, and simmer again for 30 minutes.

When done blend the soup with an immersion blender or in a processor, or leave chunky. Your choice.
