This comes from Jim Morris Hicks' daughter-in-law, Lisa, who embraces a  healthy whole foods, plant based lifestyle. Apparently, this recipe came from a good friend of Lisa's. You see how these recipes make the circuit! This dish is chock full of free radical fighting antioxidants known to do a job on rogue cells!  


3/4 cup onion, diced
4 large garlic cloves, chopped
1 1/2 tsps cardamon
1 1/2 tsps turmeric
1 1/2 tsps curry powder
1/2 tsp salt, if desired
4 T dried currants or raisins
8 cups cauliflower, chopped (about 1 1/2 to 2 heads)
4 cups chopped tomatoes
2 tsps minced fresh ginger
4 T dry red wine
3 cups green beans, ends cut and then cut in half


Place large pan on medium heat and saute the onion and garlic until soft in water or veggie broth.
Add the spices, salt, currants or raisins and mix
Add the cauliflower, chopped tomatoes, and ginger root. Simmer, covered, over low heat until the cauliflower is tender, about 15 minutes.


Uncover, add the wine, and simmer until cauliflower is tender, about another 10 minutes.
Eat as a side or as a complete meal with a whole grain on the side.
