This is another healthy recipe from Dr. Neal Barnard's "Cookbook for Reversing Diabetes.

  • 2 cans (15 oz each) white beans, rinsed and drained
  • 1/4 cup lime juice
  • 2-3 T fresh parsley leaves
  • 3/4 tsp sea salt
  • 1 large garlic clove
  • 1/4 tsp ground cumin
  • freshly ground black papper, to taste
  • 1 cup cubed avocado (1 1/2 - 2 avocados, depending on size)

In a food processor, combine the beans, lime juice, parsley, sea salt, garlic, cumin, and pepper, and puree till smooth.

Add the avocado and puree till smooth. Season with additional salt and pepper to taste.
