This recipes serves 6.

  • 2 dates (or 5 T raisins)
  • 1 (15 oz) can garbanzo beans, rinsed and drained
  • 2 T organic peanut butter
  • 2 T maple syrup
  • 3 T plain soy or almond milk
  • 2 1/2 tsps vanilla extract
  • 1 1/2 tsps cinnamon

Soak dates in 1 cup hot water for 10 minutes till soft. Drain, but reserve soaking liquid.

In food processor, combine chickpeas, soaked dates, peanut butter, maple syrup, milk, vanilla, and cinnamon. Process until smooth. You can add more milk or the soaking water from dates till you achieve your desired consistency. Note that using the soaking water will make hummus sweeter. 

Taste, adding either more maple syrup, peanut butter, or cinnamon - as your taste buds tell you.

This is wonderful over sliced apples or veggies.
