This delicious, healthy smoothie, loaded with anti-oxidants and fiber, comes from "Dr. Neal Barnard's Cookbook for Reversing Diabetes".
- 3 cups packed baby spinach
- 1/2 cup sliced overripe banana, fresh or frozen
- 1/2 cup sliced or cubed cucumber
- 1/4 cup fresh parsley leaves (optional)
- 1 lemon, peeled (can leave whole, seeds intact)
- 1 -2 T hemp seeds
- 1 1/2 cups frozen mango cubes
- 3/4 - 1 cup water
In high speed blender, combine the spinach, banana, cucumber, parsley, lemon, hemp seeds, 1 cup of the mangp and 3/4 cup water. Puree until smooth.
Add the extra 1/4 cup water if needed to thin, and add the additional 1/2 cup mango to sweeten the taste.
