This refreshing, healthy smoothie comes from Dr. Neal Barnard's latest book, "Your Body in Balace".

This serves 1!

  • 1 cup plain soymilk or almond milk
  • 2 dates (If dates very hard, soak in hot water for 10 minutes to soften.)
  • 1 frozen ripe banana
  • 2 cups mixed frozen berries
  • 1-2 cups fresh spinach
  • fresh mint or basil, optional
  • 1 T lemon juice (optional)

Combine the non-dairy milk and dates in a blender until well combined. Add remaining ingredients and blend, adding more non--dairy milk as desired for consistency and thickness. Serve immediately.
