Great dessert on a hot summer's day!

  • 2 cups cubed frozen pineapple
  • 1 cup sliced, frozen, overripe bananas
  • 1/3 cup + 1-2 T non-dairy milk
  • 1/4 tsp vanilla bean powder (optional)
  • small pinch of sea salt
  • 2-3 tsps coconut nectar or pure maple syrup (optional)

In a food processor or high speed blender, combine the pineapple, bananas, vanilla powder, salt and 1/3 cup of milk Pulse to get things moving, then puree. Add the remaining 1 - 2 T milk if needed to blend. Serve immediately or transfer to airtight container and freeze for an hour or more to set a little more before serving. This goes great with sliced strawberries.
