This No-Bake quick dessert and/or snack is from Leanne Campbell's "China Study Cookbook". I've had the recipe marked as 'FAB!'. I think you will, too. Easy, yummy, and always tastes like more!
- 1 cup low fat graham crackers, crushed
- 1/4 cup crushed walnuts
- 1/2 cup reduced fat, unsweetened coconut
- 1/3 cup natural peanut butter
- 1/4 cup non-dairy milk
- 1 cup nondairy chocolate chips
- 5 T favorite non-dairy milk (I used almond in this recipe.)
Crush graham crackers in food processor.
In a separate bowl, add walnuts, coconut, and peanut butter. Stir in the crushed graham crackers.
Slowly add the milk and mix. If mixture does not hold together, continue adding additional milk - bit by bit - until all ingredients stick together. However, don't make it too soft, and, if necessary, use your hands to ensure it mixes well.
Spread the mixture into a 9 x 9 baking dish. Make sure to spread evenly.
Then, either in a small saucepan or microwave, melt the chocolate with the non-dairy milk. Stir well until smooth. Spread the chocolate sauce on the top of the peanut butter mixture. Refrigerate for at least 1 hour or until bars are hardened. Enjoy!
