This is a refresing, zippy dressing that goes great over salads or even on cooked grains, like faro and/or quinoa.

  • 1/4 cup freshly squeezed lime juice
  • 3 T coconut nectar or maple syrup
  • 1/2 T ground chia seeds
  • 1/2 T Dijon mustard
  • 1/2 tsp ground cumin
  • 1/4 tsp cinnamon
  • Pinch of allspice
  • 1/2 tsp sea salt (optional)
  • Freshly ground pepper to taste
  • 1 T water

In a blender combine the lime juice, nectar or maple syrup, chia seeds, mustard, cumin, cinnamon, allspice, salt, and pepper. Puree until smooth. Add the water if desired to thin.

Transfer to a jar or other airtight container and refrigerate for up to a week. Ejoy!
