Serves 6:

  • 4-5 cups shredded kale and cabbage mix
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup shredded carrots
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh cilantro (optional) or fresh mint
  • 1/2 cup shelled edamame (or chopped peanuts): note that peanuts are higher in fat!
  • 1/2 cup Thai Peanut Dressing - below

In large bowl, toss together all ingredients except the dressing. Add the dressing and toss again. 

Note that you can add some fresh mango and cucumbers, if you'd like. You can also substitute fresh mint for the cilantro.

 

Thai Peanut Dressing (Makes 1 1/4 cups)

  • 1/4 cup peanut butter
  • 1/3 cup hot water
  • 1/4 cup lite coconut milk or soy milk
  • 1/4 cup sweet red chili sauce
  • 2-3 T low sodium soy sauce
  • 1 T plus 1 tsp rice vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger
  • Siracha to taste

In small bowl, whisk the peanut butter and hot water. Stir in the remaining ingredients. Add more garlic powder, ground gingeror siracha to taste.
