The "Cookbook for Reversing Diabetes" by Dr. Neal Barnard features this wonderful healthy, hearty summer salad. Enjoy!

 

  • 2 1/2 cups corn kernels
  • 1 (15) can white beans, rinsed and drained
  • 1 cup chopped red pepper
  • 1/4 cup diced cucumber
  • 1/4 cup chopped chives
  • 1/2 - 1 tsp chipotle hot sauce
  • 1/4 - 1/3 cup Lime Zinger Dressing

In a salad bowl, combine the corn, beans, pepper, cucumber, and chives, and mix thoroughly. Add 1/2 tsp of the hot sauce and 1/4 cup of the dressing. Taste, and add the remaining hot sauce or dressing to taste. Serve or store in an airtight container in the frig for up to 3 days.

Note: If you do not have the chipotle hot sauce, use about 1/4 tsp hot paprika. Taste to see if more needed.
