When I went to PCRM in 2008 for certification as a Food for Life instructor, this recipe was included in our lunch. The Vita Mix staffer prepared this soup for us, and it is so easy and delicious. The soup is chock full of wonderful anti-oxidant recipes. 

  • 3 cups low sodium vegan veggie or veggie chicken broth
  • 1 Roma (plum) tomato, halved
  • 1 medium carrot, halved
  • 1 celery stalk, halved
  • One 1/4 - 1/2 inch slice onion
  • 1 garlic cloved, peeled
  • One 1/4 - 1/2 inch slice yellow squash
  • One 1/4 - 1/2 inch thick slice red bell pepper
  • One 1/4 - 1/2 inch thick slice cabbage
  • 1 white button mushroom
  • salt and ground black pepper
  • 1 tsp taco seasoning
  • Dash of ground cumin

For the soup base, place all ingredients into Vitamix container (or other high speed blender) in the order listed and secure the lid. Start and slow speed, then increase, and blend for 6-7 minutes, until heavy steam escapes from the vented lid.

You can add other ingredients to soup: jalapeno , olives, corn, and or chips and blend for an additional 10 seconds.

This recipe makes 5 cups. You can double ingredients for larger batch of soup. It is so tasty. Enjoy!!
